Several years ago my favorite Thai restaurant in Hillsboro was torn down to make way for a little strip mall with a MOD Pizza, a haircut place and a Chipotle. I haven’t really ate Thai food since, however after find PAC Thai in Forest Grove that all changed. Located in an unassuming building on Pacific you would never know what tasty delights await you.
They are locally and family owned since 2011, and pride themselves on using fresh, local ingredients whenever possible. During the warm summer months much of the produce that they use in their dishes comes from their backyard gardens. One of the things I really love is that none of their dishes are pre-made which means you can have your food made the way you like it.
Their basil fried rice is absolutely amazing. I am not sure exactly what they do to make this dish taste so fantastic but I can say it’s some of the yummiest fried rice that I’ve ever had the pleasure of eating. I also am a huge fan of the lemongrass chicken. The peanut sauce that they drizzle on top is like nothing I’ve ever had before. Typically I’m not a huge sauce fan, but I could eat a whole jar of this stuff all on its own.
